Continuing his career of nearly 20 years as an innovative restauranteur and food marketer, Bill Russell-Shapiro, then 51, opened Absinthe Brasserie & Bar, a South-of-France brasserie located in the City's burgeoning Civic Center, in 1998.

Today, Absinthe is one of the most romantic and popular fine-dining establishments in San Francisco, serving classic and creative upscale French brasserie fare.
