Most foods and grains are organically grown with as many as possible from local farms. The soups are our own recipes, using fresh herbs, and all foods cooked in nut or olive oils. Our chickens are naturally raised and range fed, and we use only natural meats, without antibiotics or force fed hormones. Only the freshest of fish is served and we minimize the use of dairy ingredients. The steam convection oven is our pride and joy, but alas, against our principals, we do prepare our aumelettes in teflon coated pans. All foods and baked goods are prepared on the premises in one of our two kitchens, believe it or not, one above and one below. We use no food colourings, preservatives, refined sugar or bleached flour. Our bread is baked daily from organic grains. We generally feature some wines with organically grown grapes and always feature fine wines from small wineries known for their care and award winning efforts. The food we serve is:Made from organic ingredients as much as possible. We use only fresh vegetables, whole grains, beans, nuts, seeds, fruits, natural condiments, sea vegetables and soy products. Free of all refined sugar, meat, poultry, dairy, eggs and other related animal products. Naturally low in fat, has a good protein base and is high in fiber. We use only top quality sea salt and oils, along with fresh herbs and condiments. Our water is filtered. Balanced with Oriental health philosophies and modern health conscious western nutritional recommendations. Cooked in quality cookware over a gas range. We do not own a microwave. Prepared fresh by hand everyday.
Folks with food allergies and chemical sensitivities are ecstatic to find out about us since we use certified organic ingredients and no artificial anything. Most of our recipes do not contain any nuts but identify them in the menu when they do. Our pies typically do make use of our delicious Almond Date Crust. Since opening to the public we have never had a serious incident of reaction to any foods here by an individual with food allergies or chemical sensitivities.
Our desserts are truly spectacular. No sugar, concentrated or artificial sweeteners are ever used. Our pies are typically made with a crust of simply Pecan & Dates or Raisin. No wheat, other flour or dairy is ever used. The fresh fruit fillings are enhanced with perfect spices, like fresh cinnamon, cardamom, vanilla and ginger. We make creamy toppings by whipping cashew or almonds with vanilla, dates, figs, apricots or berries. Our favorite new topping is sweet young coconut water, coconut meat and dates blended creamy. Our cookies and brownies are made with rich home-made nut butters, fresh and dried fruits, spices and sometimes feature our raw carob powder. Dense in nutrients, these desserts are filling and not only guilt-free but nourishing for you. They are true "power bars", as they are typically rich in raw, utilizable protein and essential fatty-acids.
