The Mark
Currently the only organic restaurant certified by the State of Washington, the Mark is all about health, sustainability, and exceptional rustic Italian cuisine.
Chef/owner Lisa Owen estimates 75% of food products used are certified organic. Since it’s not possible to validate all ingredients, imported items such as cheeses are instead selected for quality and sustainability.
When available, organic produce is purchased from local neighboring farms. Certified organic chicken and beef are also acquired from nearby farms; if organic meats are not available, free range, hormone free meats are used as alternatives.
Pasta is fresh, made with organic ingredients and local free range, antibiotic-free eggs. The menu also features wild, sustainably harvested salmon and scallops.
The Mark is open Thursday through Saturday, 5pm to 1am, and by private hire Monday through Wednesday.
